Simply combine the cheese and chilli sauce into a smooth paste, then coat the straws in the mixture. Bake in a hot oven until very deep brown.
KIPPERS & CUSTARD
Bone kippers, chop onion and banana. Flake half of the kippers into a well-oiled casserole dish. Sprinkle with a layer of onion and banana, seasoning liberally with fennel seed, then covering with custard. Bake in a very hot oven until set and browned on top. For extra flavour, try a good thick topping of parmesan cheese before serving.
STEAK AND KIDNEY JELLY
First drain the gravy from the tin. Pour into a measuring jug and then top up with water to make the required amount of water for the jelly. Make up jelly following packet instructions. While the jelly cools, cut the carrot and pepper into decorative strips and arrange at the bottom of your jelly mould. Whisk the steak & kidney into the jelly and pour into the mould. Chill until set.
Vegetables that would be a good accompaniment would be cabbage and leek purée, saûtéed beetroot and lentil loaf. Or for warmer days, why not try a salad of cauliflower, onion, raw potato and leeks?
BLACK FOREST TRIPE
Trim the tripe into squares about 6 × 6". Spread each thick square with a good layer of the jam and allow to soak for at least twelve hours. Whip the cream until stiff, then coat each square with the cream. Sprinkle the broken choc. bars over each piece.
IRISH COFFEE, CHEESE & BISCUITS
Combine all ingredients in your electric blender until thick and creamy, pour into goblets and serve... a really original nightcap.
